The Chef In The Hat is Thierry Rautureau, the talented force behind Loulay Kitchen & Bar and Luc restaurants, bringing a French twist to the best of Pacific Northwest cuisine.


Named for Chef Thierry Rautureau’s hometown of Saint Hilaire de Loulay in France, Loulay Kitchen & Bar marries the French influence of his upbringing with modern twist and sensibility to provide an accessible dining experience for everyone.

Loulay’s menu highlights the freshness of local and seasonal ingredients following the Chef In The Hat tradition. Many of the menu items are rooted in his childhood memories, including hot chocolate with brioche and salted butter that is based on a recipe shared with his grandparents.
